Modern European restaurant District 10 joins the buzz of new food establishments in Suntec City with the launch of its latest flagship over at Tower Two. Besides having the first al fresco bar in the area, the restaurant also boasts a strong focus on premium dry-aged steaks. Seating 60 people under the stars with the latest tunes on shuffle, District 10 @ Suntec’s outdoor bar is perfect for after-work drinks. Plus, we hear the chef sends out complimentary steak sliders for all happy hour customers. The snug 30-seater indoors, however, is quite the eye opener. Next to an impressive European meat showcase and their $22,000 dry-aged beef refrigerator, stands a bespoke butcher’s block that is customized to Chef Luca’s height. If you’re lucky, you might just catch him in action.

What’s so great about Dry-aged beef?

Like some wines and cheese, beef can taste better with age. The dry-aging technique works by preserving cuts under carefully controlled temperature and humidity levels for weeks or months. That causes the enzymes to break down connective tissues in the muscles, hence softening and tenderizing the meat, leaving it with more concentrated natural flavours as well. To savour this age-old practice at its best, we recommend going for the 45 Days Home Dry Aged Corn-Fed Traditional Fiorentina Steak ($22 per 100g). Here, the ‘lesser is better’ rule applies when the steak itself oozes juices that are already good on its own. Dressed in nothing but a basic seasoning of salt, pepper, olive oil and herbs, its time on the charcoal grill gives it nice crisp charred edges with a smoky finish. If you have an inclination towards fatty meats, then the 45 Days Dry Aged Corn-Fed OP Rib ($18 per 100g) is one you shouldn’t miss.

Besides their promising premium steaks, their dessert section is one that will have you returning for more. Think pyramid of Profiteroles ($18) filled with chestnut and s’mores-inspired Bitter Chocolate ($14, pictured) layered with marshmallow fluff and caramelized bananas on the side.
