Easy Recipes for Reunion Dinner

Steamboats are a common solution for a fuss-free reunion dinner. But for those who prefer to whip up a meal and are in the midst of planning for your feast, here are two simple recipes you could bring to the table. Also, read on to find out how you can purchase some sturdy cast iron products for a steal.
Spare Ribs in Black Bean Sauce With Rice (Serves 4) Ingredients: Rice - 1.5 cup (regular rice cooker measuring cup) Spare ribs - 200g Broccoli - 4 small stalks Seasonings: Crushed garlic - 1 teaspoon Black beans - 1 teaspoon Sugar - 0.5 teaspoon Light soy sauce - 1 teaspoon Dash of salt, corn flour and cooking oil Preparation: 1. Rinse the spare ribs and marinate for 30 minutes. 2. Blanch the broccoli in boiling water with salt and oil, or just boiling water if preferred, and set aside. 3. Rinse the rice. Cooking method: 1. Put the rinsed rice in the Le Creuset 20cm Round French Oven. Add your usual amount of water used to cook rice, close the lid and cook on medium heat. Do note that the flame should not extend beyond the edge of the bottom of the cocotte. 2. After the rice has been boiling for one minute, open the lid and stir with chopsticks. Then, close the lid and cook on low heat for two more minutes. 3. Open the lid and spread the marinated spare ribs over the rice. Close the lid and turn the heat up slightly. 4. When steam starts coming from the cocotte’s side, turn the heat back to low and cook for 10 minutes. Then cook on extra-low heat for 15 minutes, to dry the rice. If you prefer crispy rice, extend the cooking time. 5. Add broccoli and serve.
Steamed Fish (Serves 4)
Ingredients Fresh fish (about 800g) - 1 piece Ginger (cut into thin shreds) 4 slices Spring onion (cut into thin shreds) - 2 stalks Spring onion (cut into sections) - 1 stalk Light soy sauce - 3 tablespoons Water - 3 tablespoons Sugar - 1 tablespoon Method 1. Remove scales and guts of fish. Rinse fish and pat dry. 2. Pour ½ cup water into the Le Creuset 26 cm Buffet Casserole over medium heat. Once the water boils, drain it away and turn to low heat. 3. Soak the spring onion fully with water. Then, place the fish on top, cover with lid and steam for 5 minutes. 4. Put shredded ginger on top of the fish. Cover with lid again and steam for an extra 5 minutes. Add remaining shredded spring onion and sauce ingredients. Drizzle 2 tablespoons of boiling hot oil and sauce on fish. Note: If you would like to cook two dishes inside one pot at the same time, you can replace the spring onion with Choi Sum or Tofu. The juice from the fish will be absorbed by Choi Sum or Tofu, which tastes sweet and without a fishy smell.
