The Six Textures of Oysters, served hot and cold
For its 10th anniversary, the brains behind the kitchen have done it again. They have come up with a revamped menu which merges some of the favourite items with new creations guaranteed to give a whole new dimension to your culinary experience. To start the evening, have the Six Textures of Oysters, served either hot or cold. A favourite of ours is the one topped with parma ham. The creativity of this item deserves merit for the saltiness of the parma ham complements the sea taste of the fresh oyster. It’s truly worth a try, even for those who aren’t fans of this type of seafood.
Mains to keep your belly satisfied
Torchon of Foie Gras
Wait until you finish the appetiser before you dig into the main course. And for this part of the meal, there are a lot to choose from. Any foie gras lover out there? If you are, the Torchon of Foie Gras is the one for you. It has a soft and rich texture that it’s almost too indulgent to eat. To balance the heaviness of the liver, it comes with herbed croutons, hazelnut crumble, and amarena cherries. But don’t get us wrong, even with all the sides, the foie gras still remains as the dish’s highlight… just like how you want it!
Another option is the Duo of Iberico Pork, one of the restaurant’s specialties. What makes this special is how the high-quality meat is prepared. First, it’s finely minced to make into croquettes and served with a sous vide of pork loin. Not different from how The Cliff serves other items from the menu, it’s made to look fancier with creamy savoy cabbage and sweet pearl apple balls drizzled in pork jus.
U.S. Prime Tenderloin
Declared by the restaurant as the star of the menu, the Pan-fried U.S. Prime Tenderloin is made to be very tender that the meat just seems to melt in your mouth. Enhancing the overall appeal of this dish is the sweet potato gratin and root vegetables on the side. To perk up the taste, it’s finished with port wine sauce.
Do try the desserts!
Mango & Passionfruit and the Millefeuille Glacee
It’s the desserts menu which had a major overhaul, but in a good way. Now, you can get to enjoy delectable items, mostly inspired from French sweets. Who can say no to the Millefeuille Glacee with raspberry and mango sorbet or the Chestnut Macaron coated with sweet white chocolate? They’re truly sinful treats for the dessert lovers.
Restaurant with a view
The restaurant provides some sort of respite coupled with the zest of the city
Aside from its culinary offerings, The Cliff prides itself as one of the few restaurants with the best views. Its tree-top and al fresco concept overlooks the South China Sea and adds to its romantic feel. Do visit the restaurant just when the sun is about to set and witness how the restaurant gets drenched with the sun’s rays…a moment to experience! The dining area is also very spacious and provides the right amount of privacy, something which everyone really values nowadays.
