Moving on with Yellow and Orange colours for this edition of Simplicity of Somethings, this orange-yellow pigment is often the formation of carotenoids. Carotenoids creates not only a beautiful colour, it helps the heart by keeping “bad” LDL cholesterol from building a layer on the artery walls. Above that, Carotenoids surrounds the tiny platelets in our bloodstream therefore creating a non-stick layer. These keeps the platelets from gathering together thereby forming clots. Carotenoids cut the risk of heart attack and stroke. Let us consider this fruit that parents often encourage their children to consume since young, our faithful friend, (although some say annoying) Orange. Not just being loaded with Vitamin C, Orange also helps protect against cancer, heart disease and many negative effects of aging. Its nutritional effects helps reduce bad cholestrol, lower blood pressure and rid the body of excess homocysteine – a nasty compound that is strongly linked to heart disease. According to Journal of the National Cancer Institute, nonsmokers who ate the most alpha-carotene rich foods reduced their risk of lung cancer by a good 63 percent. These alpha-carotene can be found in this food item that our childhood friend Bugs Bunny loves to feed on - carrots. Nutrients in carrots are converted into vitamin A which then forms the cycle of care for maintaing healthy teeth, skeletal and soft tissue, mucous membranes and skin. And we know why bunnies have such beautiful eyes because retinol, an active form of vitamin A produces the pigments in the retina of the eye. A little tip from the Indo-American hospital, chewing a carrot immediately after any type of non-vegetarian food prevents the excessive formation of uric acid, kills germs in the mouth, cleans the teeth and also help prevents bleeding of the gums and tooth decay. For starters, we have the Carrot and Pumpkin Soup. This regular soup tastes unlike other canned soup. Its nice how the chicken broth didnt overwhelm the taste of the carrot and pumpkin. The carrot and pumpkin complimented each other real well in this dish. This is real goodness in a bowl. As for the Tarragon Chicken with Sweet Potato Mash, you will find that it is an interesting combination to have mushroom wrapped inside the chicken leg. The mushroom absorbed the juice from the chicken and the condiments. Having the rosemary leaves was good as well. Although the chicken wasn't marinated long enough, those rosemary leaves gave the chicken meat the extra tinge of flavor. Not many restaurants serve sweet potato mash with its skin still in it. I feel that it really should be done that way. The skin gave the sweet potato mash the additional texture. Lastly, enjoy a perfect dessert. The Fresh Papaya with Fruit Yogurt and Berries dubbed "beta-carotene freshness in a cup". Thats exactly how I would describe this dish. In one scoop, I manage to get some papaya, orange and blueberries, send it into the mouth and I feel so fresh! It was an instant burst of Vitamin C at that moment. This yogurt will do wonders for a lazy afternoon. It's really not that hard to eat right or even to prepare a delightful colour meal. Join us on the next Simplicity of Somethings episode.
