In this edition of Simplicity of Somethings, Color Cuisine, we shall touch on the White and Tan Cuisine. White, although some would say is not a color, should really be a candidate for anyone’s favorite color. It is not just about dressing wise for it gives people the impression of being pure and looking fairy-like, white cuisine contains elements that are linked to a healthier and slimmer person.
White fruits and vegetables contain nutrients such as beta-glucans and lignans that provide powerful immune-boosting activity. Beta-glucans, when extracted from yeast and medicinal mushroom, are notable for their ability to modulate the immune system. This gives our body system the increased capability to reduce the risk of colon cancer and many hormone-related cancers.
Lignans, accompanied by increased metabolites rates, indirectly influences the presence of lower BMIs and total body fat mass, says a study from Canada.
A study of 115 post-menopausal women showed that those with the highest blood levels of enterolactone, a lignan metabolite, had a BMI 4kg/m2 less than women with the lowest average blood levels. This was based on the results published in the British Journal of Nutrition.
White meat, which is recommended by many over red meat, is vital for the caloric conscious too. Compared to red meat, white meat contains less saturated fat. It also has less myoglobin, a bio-compound in animals such as chicken which enables muscles to transport oxygen. While red meat has its benefits, white meat might be a smarter choice for those that are counting the calories in their meal.
A little tip from the everyday kitchen: if one is consuming chicken meat for its protein value (eg: before hitting the gym), go for chicken breast meat rather than chicken thigh meat.
