Typically, mee rebus is made of yellow egg noodles, with a spicy and sweet curry-like gravy, which makes or breaks the dish. Ingredients for the gravy comprises potatoes, curry powder, water, salted soya beans, dried shrimps, and peanuts. On top of that, it is garnished with a hard boiled egg, calamansi limes, spring onions, Chinese celery, green chillies, fried firm tofu (tau kwa), fried shallots and bean sprouts.
I like the version of Mee Rebus from Alrahman Kitchen. Basically, the gravy was thick and served with generous portion which was sufficient for each mouth noodle.
In comparison to most Mee Rebus gravy, this was slightly more spicy, but still bearable and tasty.
