Tried this dish for the first time and fallen in love with it. The fish head was of an average sized and expertly steamed to the right texture but managed to retain the freshness of the fish as well as the firmness of its meat. The fish head was steamed with soya sauce in a typical teochew style then added the fried garlic and spring onion to enhance the flavor before served. The dish goes so well with rice.
