Dinner Date: 17 July 2014Dish tried: Char Siew Wonton Noodle ( Dry / Soup)Price: Average $4 per headNearest MRT: Chinatown ( Chinatown Food Market Center )This is one stall that i have patronized since young and it was one of the two wonton noodle stall that has developed my likings for chilli sauce and green cut chilli since the age of 5 when my parents introduce this dish to me.Operated by a families of sisters and brothers, they have been in this business for more than 35 years. They also operate another stall just beside selling cantonese style porridge which you can find in open rice. The stall was operated usually by the younger sister who is a cheerful lady. We usually go for their noodles as default selection as their noodles are specially made by a vendor who supplies them. The stall however will not sell noodles on Sunday to ensure there is enough manpower to handle the porridge stall and act as 2nd kitchen to process the ingredients for the porridge business.Lets dig in to the noodles , tian tian wonton noodles are what i labelled as old school type of noodles differs from the usual wonton noodles you will eat in restaurant like crystal Jade. As it is situated above the wet market, all ingredients found within the plate are freshly purchased other than the green pickled chillies which are prepared and stored.The charsiew which is chinese roast pork with bright chilli red coloring are of the lean type and cut into thin slice. The star of the dish which is wonton are wrapped with mince meat mix with dried fish powder gives a nice chewy yet fragance taste a meaty dumpling should have.The broth are typical pork and chicken bone broth and is filtered and removed all residue to give the soup a clean look and yet immersed taste. The noodle are cooked less than 2 minutes and going through canton style of "cold river" to shock the noodle and gives the chewiness and also removed any akaline taste that usually accompany for such noodle. Accompany with their homemade chilli sauce which is mixture of vinegar, sugar and chilli blend, you can see the fine grain giving it a good taste and feel to your tastebud and yet satisfying. Accompany with the homemade green pickled chillis is beyond description and yet leaving a clean taste. If you are asking for soup version,then it will be simply soak into broth and the noodle absorbing the broth will give it a refreshing taste which has slight sweetness. One thing note, they do not add MSG thus sweetness are natural from the essence of the bones boiled for hours. Top up with pickled green chili will give you an unexpected taste if you are like it for a difference.They opened pretty early like 6.30 am onwards and sold off by usually 2pm. continue reading
