I didn’t fancy the Hazelnut Hot Chocolate with chocolate shavings ($6.80++) which is made with Gianduja and Guanaja 70% Grand Cru. It was too thin and didn’t pack that chocolate punch for me.
It’s a fact that macarons are sweet, sometimes irkily so, and I usually can’t stomach more than 6 at one go, 7 max. But Chef Then’s macarons ($2++ each) make me wanna keep on eating! Passionfruit is filled with tangy-sweet conserve while Butterfly Pea Bloom is very interesting with kaya and pandan almond cream, but it’s the Black Palm Island Salt that makes it impossible to stop at one. Filled with salted egg and almond cream, topped with black palm island salt, this is an ingenious work of art that exemplifies a delicate balance of saltiness and sweetness.
Jewels’ chocolates are the real gems though. Perle Noir ($5++) is a delight with satiny champagne ganache wrapped with crunchy dark chocolate pearls but I like Topaz ($3.50++) even more. If chocolates have a gender, Topaz has to be a male, strong and potent with macallan 12-year-old single malt whiskey and fresh cream coated with a thin layer of milk chocolate.
Made with 85% abinao dark chocolate, the Chocolate Gateau is as rich and moist as Laurent Bernard’s truffle cake but I prefer the latter for its lighter and smoother ganache.
