I say bouncy because the fats are quite firm which gives the slightly bouncy texture. The char siew here is the sweeter kind so if you like your char siew to have a sweeter taste, this will suit you. The gravy for the rice also deserves praise as it is quite savoury and it is a delight mixing the gravy together with plain white rice.
