The dry version is crispy and yet moist with the oyster taste fully absorbed into the egg omelette. The starch & egg ratio in the omelette is just nice without a stiff dry taste. I found the egg omelette at the food court just taste like plain fried eggs. The wet version is smooth and melts in your mouth. The oysters for both versions are big & juicy. Eat it with a dash of the dip chilli & the overall taste is just too appealing for me to make a 2nd trip!
