With more than 20 years working as a pastry chef in the kitchens of well-established hotels under his belt, Chef and owner of The Baker's Story- Eric Tan decided to take a leap of faith and venture out on his own. The risk paid off and 8 years after his first humble cake shop at level 1 of Sin Ming Centre emanated successfully, Chef Eric has since opened his second outlet at Orchid Hotel for more people to have a taste of this home-grown bakery.

While the shop has now expanded its offerings to Fruit Cakes, Tarts, Dry Cakes, Mousse Cakes and Made-to-order Cakes, their signature cheese brownies still remain as their top sellers with up to 7 variations for you to choose from!

These cheese brownies were addictive with that cloying sweetness that usually makes you put down the fork after a bite or two, strangely absent. Dangerous, because you could possibly just eat it all, till the last crumb, without even realising it. It was that good. The winning factor for me personally was the malleable nature of the brownies (do not leave it un-chilled for too long, it crumbles) which allowed me to eat it immediately after taking it out of the fridge (unlike other brownies that turn rock hard when they are chilled). Another point was the gooey, creamy texture of the cheese brownies which was also incredibly smooth and rich.

My top picks had to be the Banana and Walnut Chocolate because I always appreciate a contrast of textures in my food. But if you like your palate to be teased, then I say go for the Mint and Orange. Ever in doubt? Dive straight for the classic Cream Cheese or Crunchy Cheese, you cannot go wrong.
