As stated in the dish name: (For one person portion) 1 Palm-sized potato 1 Hard-boiled egg 80g bacon bits
Seasoning
1 tbsp mayonnaise 1/2 tsp mustard Salt & pepper
Method
1. Boiled potato in hot water till tender but not too soft (you would not want the salad to become mashed potato.) 2. Pan-fried bacon bits till golden colour and fragrance. 3. Cubed the potato and hard-boiled egg. Chill them for a while. Add in bacon bits. 4. Add in the mayonnaise and seasoning.
Tips
- I prefer to have them cold. So I will put the salad in fridge or prepare this overnight and add in mayonnaise only when served. - If you are vegetarian or do not have bacon bits, you can omit it but I think the flavour will be much lesser.
