I’m featuring one of my dishes for my My Chinese New Year Feasts - Yam Ring Treasures. For the non-Chinese, this is a very popular dish for all occasions.
1 Yam Ring 1 Strip of Chicken breast 5 medium Prawns 2 Chinese Mushrooms 8 Gingko Nuts 8 Cashew Nuts 1 tbsp of Green & Red Capsium each (diced) 3 slices Ginger 3 Sweet Peas 1 Water Chestnut 1 tsp Oyster sauce ½ minced Garlic ½ minced Ginger 1 tbsp Chinese wine Cooking oil Pepper to taste Edible flowers & Bean Vermicelli (Glass Noodles, 粉絲) for presentation
Marinade for Chicken: 1 tsp Oyster sauce ½ tsp Sesame oil Pepper to taste Pinch of Cornflour
Method
Wash & dice chicken. Marinate for at least 30 mins. Dispose shells & de-vein prawns. Wash & dice.
Peel chestnuts. Wash & slice into pieces. Soak mushrooms in water till soft. Remove stem & dice mushrooms.
Remove “veins” from peas by pinching one end & pulling it off. Rinse & set aside.
Heat wok & deep-fry yam ring till golden brown. Drain & put on serving plate. Deep-fry vermicelli till it expands. Drain & set aside.
Heat wok & sautéed garlic & ginger till fragrant. Stir-fry chicken till half-cooked.
Throw in the rest of the ingredients & seasonings. Mix well.
Transfer into the yam ring when prawns turn pink.
To serve, decorate the ring with the crispy vermicelli. Add in flowers for colours & you’ve a yummy dish to entertain your guests!

I’ve gotten the Yam Ring (芋圈) for just S$4, & simply filled it up with my favourite ingredients.
