With a revamped menu revolving around a selection of Eggs Specialties and Gourmet Bites, which can be ordered an unlimited number of times, Checkers Brasserie hopes to allow diners more time to mingle and socialise instead of waiting for food from the buffet line.Ambience at Checkers Brasserie evokes the rustic, countryside feel, with wooden panelling and summer colours. Layout is spacious, with the glass panels at the side letting in natural light and framing the greenery of the garden outside. While ambient light is sufficient, I noticed the corners of Checkers Brasserie tends to be darker. The main showpiece is the well thought out display of the buffet spread, laid out in logical sequence.Service at Checkers Brasserie is efficient, friendly, and professional. Staff seem more than happy to assist, and orders don't take too long to fulfill. Finished plates are cleared quickly. I noticed that most of the senior staff are very familiar with the food and drinks available, though not everyone in the rank and file is able to answer queries.The Eggs Specialties are the highlight on the Sunday Brunch Buffet menu at Checkers Brasserie, with a choice of 6 different styles of eggs, prepared in international styles. You don't have to wait at the counter, just place your order and staff will serve it to your table when ready. You can order as many rounds of the Eggs Specialities as you wish.The Modern style eggs are served in a mini cauldron, with a free range egg precisely cooked at 45 degrees celsius, on a bed of savoury chanterelle mushrooms and mushroom gravy. This was quite a stand out dish for me, really excellent combinaion of flavours. Pair this with crisp bread for maximum satisfaction.The Beef Bourguignon consists of tender, slow braised beef cheeks on a bed of bacon, mushrooms, onions, and truffle oil infused polenta, with a red wine sauce. I felt this was probably the best of the Gourmet Bites, just loved the tender meat and aromatic flavour profile of the dish. Checkers Brasserie Sunday Brunch Buffet is only available on Sunday from 11.45am - 3pm. Items on this menu can be specially ordered ala-carte on other days. Prices start at SGD $80 per person, for a free flow of the regular buffet, Eggs Specialities, Gourmet Bites and smoothies / water / juices / coffee / tea. For free flow of wines or cocktails, add additional SGD $18. The luxurious Champagne Brunch starts at SGD $128.

Diners can then enjoy a selection of Gourmet Bites such as Wagyu Beef, Foie Gras Dumplings, Pan-Seared Scallops and Egg Specialties of Modern, French, Italian, Japanese influences prepared à la minute but still delight in a generous spread of antipasti, charcuterie, seafood on ice, cheeses and desserts as they wait for their orders to be served.Be greeted by a complimentary amuse-bouche platter that is served once you are seated. Munch on the little bites as you browse through the menu selections and decide what you wish to order. Freshly blended smoothies such as the Berry Berry, Spicy Banana, Raspberry Splash and Honey Chocolate are highly recommended and not to be missed.Fresh juices and yogurts are also free-flow with bottled options so you can simply take back a bottle or two to the table and share with your party. The Checkers Brasserie culinary team had specially added this alternative so that diners need not have to walk up and down for refills and hence have more time to spend mingling with their friends at the table.From the list of Egg Specialties, we chose two that sounded most scrumptious. But other offerings from around the globe include the American (sizzling eggs on a hot plate with double apple-wood smoked bacon), English (eggs with wagyu corned beef hash) and Italian (poached eggs in devil tomato sauce).The Gourmet Bites section of the menu offers a concise variety of seven dishes to choose from.Adding on to the list of dishes to impress, the Wagyu Beef definitely did not disappoint. My first time dinning at Hilton hotel. The environment was quite good. total we had 9 dishes including desserts. The first to served was the cold plate, inside there was some thing crispy but not sure what it's called it taste a bit hard. The salad prawn was nice. I like the cod fish dish, the fish is so fresh and mix well with the sauces, highly recommended dish! The prawns was also very fresh and they even provided lemon juice for hand cleaning after peeling off the prawns. Good service! Herbal chicken is not recommended, it seems like they have did it for quite sometime till the chicken seems to be too soft. Shark fin is nicely mix, the mango desserts is nice with a shape of a fish. Overall good is still not too bad with good services.

This is my second visit to Hilton Hotel dinner. I like their cold plate Prawn Salad, the taste was quite unique. Hua Diao prawn - prawn not very fresh,but quite sweet, no hua diao taste at allThe fish was nicest among all, it was very tender,goes well with their sauce. Herbal Chicken Soup was a bit oily, soup have the herbal taste but chicken was bland, tasteless. I find the Black Noodles quite unique, inside have prawn, scallops, mushroom, but not much taste.Their Mango Pudding was nice. Service not very good, food wise so-so only.

A group of us decided to try A la carte meals at Hilton. They cooked the fish for you very nice.Checkers Brasserie is a trendy all-day dining restaurant, serves a daily theme buffet ranging from Asian favourites to a scrumptious Western selection from Monday to Saturday and the ever-popular Brunch on Sundays. The extensive a la carte menu features a wide variety of local and international delights.Good value - Great service! I'll be back for sure to indulge in a sumptuous spread of international cuisine at Checkers Brasserie's Sunday brunch. Savour fresh seafood, succulent meats and toast the weekend with premium Louis Roederer Brut Champagne.The ambience was pleasing and it wasn't too crowded, so no need to push.
