A Michelin Affair at Old Hong Kong Legend

If you want to know how a Michelin Star Chef’s cooking tastes like, then here’s your chance. From 11 to 13 April 2011, Old Hong Kong Legend is serving a special menu from none other than Michelin Chef Ng Sui Hong and Executive Chef Yau Chin Ping. The menu consists of 6 dishes and features some of the best dishes in the Hangzhou Cuisine.
The Legendary Dragon Prelude
I was lucky enough to be able to sample these new dishes that Old Hong Kong Legend has to offer. My gastronomic experience began with the appetizer called The Legendary Dragon Prelude which consisted of the Chicken Puff with Whole South African Abalone, Fragrant Kalimeris, and the Deep-Fried Bean Curd Ring. I really enjoyed all three because the abalone was very meaty and tasty, the Kalimeris was very light and flaky, while the bean curd was very juicy. Now, this was only the first dish and I gotta say that I was already impressed.
Imperial Phoenix Chapter
Next up was the Imperial Phoenix Chapter which is actually the Imperial Bird’s Nest with Braised Phoenix Shark’s Fin. What I liked about it was that it was served really hot so it was really soothing to my hungry stomach. It was also thick, a bit slimy, and was filled with egg tidbits. After warming my stomach, it was now time for The Medley of Grandeur. In this dish, the lobster meat was stir-fried and was served with pumpkin egg yolk sauce. It was followed with The Royal Jewel Interlude, which reminded me much of siew pao. Basically, it was Braised Pork Belly sandwiched between two thick and soft breads. With all the dishes that I’ve tasted, it turned out that there was still one more main dish to sample: the Grandioso Overture composed of the Hangzhou Fried Noodles with Brasenia Fishballs. My comment for this dish was that the noodles were a bit too oily. As for the finale, I was served with a dish called Dew Drop Cadence which is the glutinous riceballs in Osmanthus Brandy with Black Sesame Pancake. For the last dish which was served in a six-course lunch menu, it was a bit too heavy for my appetite. It tasted good, but I didn’t enjoy it that much because I was already too full!

Overall, my dining experience at Old Hong Kong Legend was very memorable in the sense that I was able to sample authentic Hangzhou dishes from two great chef who presented me with such spectacular dishes.
