Yogurt is a delicious and healthier treat for the health conscious. If you’re watching your waistline, you will definitely love yogurt as an alternative dessert to the more fattening ones such as ice-cream and milkshake. If you think that yogurt is sour and not appetizing, you’re absolutely wrong! It comes in many different flavours these days and it is a good source of vitamin C as well. The yogurt has definitely been a part of our daily healthy diet, but have you ever wondered how it is produced? In almost all parts of the word, yogurt is being consumed. It is traditionally produced by milk curdled by bacteria with strains of Streptococcus and Lactobacillus bacteria to raw milk. In the modern commercial yogurt making, a blend of concentrated sterilized milk and milk solids is inoculated with the two bacteria then incubated for hours until it becomes custard-like texture with a tart flavour. Various flavours and sweetening maybe added at this stage to give it flavour. That’s why we can get to choose from so many different types of innovative flavours in supermarkets today. Do you know that yogurt is one of the longest food around which have been eaten at least 5,400 years ago? The earliest yogurt was probably fermented spontaneously, perhaps by wild bacteria residing inside goatskin bags used for transportation. In the year 1907, a Russian Nobel laureate biologist by the name of Mechnikov believes that regular consumption of yogurt helps to lengthen the lifespan of Bulgarian peasants. Hence, he worked to popularise yogurt as a food source throughout Europe. Only in 1919, Isaac Carasso industrialized the production of yogurt in Barcelona under the name Danone; which then later expanded to America with the name Dannon. Yogurt has become a very common food around the world today as it contains a very unique health benefit of protein, calcium, riboflavin, vitamin B6 and vitamin B12. It has more nutritional benefits compared to those of milk. Today, the yogurt is a staple dish for many people in the Central and Western Asia, South Eastern and Central Europe as well as India. In this installment of recipe, I will be showing you some interesting things which you can do with yogurt and how to incorporate it as a healthier snack in alternative to junk food.
