The weekends are for lazing a little longer in bed, and feasting like royalty. While I do love eating, I enjoy the process of cooking up a storm as well. This recipe serves 4 and is perfect for those Saturdays when you just want to invite a couple of friends over for brunch. Impress them with a fancy-looking skillet full of cheesy goodness. Ingredients: 2 tbsp olive oil 1 large onion, diced 3 garlic cloves, diced Button mushroom, sliced thinly Sausages, sliced thinly Cherry tomatoes, halved 3 eggs 3 cheddar cheese slices 3 cheese wedges 1.5 cup milk Toasted bread to serve Method:

1. In a large skillet, heat oil over medium-low heat. Add the onion and garlic, stir fry for a minute or so until fragrant. 2. Add in the sliced tomatoes, sausages and mushroom. Stir-fry for about 5 minutes.

3. Add in the milk and cheeses. Let it simmer until the sauce has thickened. 4. Gently crack in the eggs evenly around the pan over the sauce.
