Signature Dishes
Decided to have an atas lunch with daughter and this cafe is by the pool side. I must say Marriott Hotel has a really nice and swanky pool. Eating your lunch here and watch folks chillax by the pool generates a very peaceful feeling. I opted for the grilled cod and it was fresh and perfectly grilled. Layer of grilled crisp on the outside and soft buttery fish on the inside. Very good!Daughter ordered her usual pasta and they don't have a large selection so she decided to try their lobster linguine. It's not a tomato nor cream base pasta, more like aglio olio style. The lobster is quite big and it was fresh. However, I found the pasta a tad under-seasoned. It's not bad. We were greedy and ordered a mash potato to share. It's served in a tiny cast iron pot but the flavours are spot on and the creamy texture had us both hooked! Social politeness prevented us from licking the pot clean. HehNot a place to have regular lunch as it is atas but service is great and it's overall a very enjoyable experience.

Chef Ortiz was born and bred in Barcelona, is a 3rd generation of restaurateur. For the last 3 years, Chef Ortiz has expand his horizon to Asia, and incorporate the colourful flavours of Asia in his cooking.From 15 February to 13 March 2016, you can taste the characteristic of Chef Albert cooking at Pool Grill. I was fortunate enough to be the first few to sample his gastronomic delight in 4 course dinner ($58++) The bread, Onion Focaccia. The signature bread from Marriott bakery. The crust on top and bottom was just crispy, while the inner part of the bread is soft, moist with fragrance from the onion. Appetizer - Pan-seared scallop, “sofrito” puree, chorizo “migas”, caviar oil and dill. The scallop is nicely seared, sweet and brainy. The texture is so soft, like cutting through a butter with hot knife. The sofrito puree, made from capsicum and olive oil provided a subtle companion to the scallop. For crispy, crumbly texture, Chef Albert added aromatic chorizo migas, which is a traditional dish in Spain made from day old bread. The touch of caviar helps brings out the flavour of the sea in this dish. Starter - grilled octopus, crusty pork jowl, buttered mashed potato and smoked Spanish paprika oil. Chef Albert version of surf and turf. The octopus was sous-vide before it was grilled to add texture and flavour. It has a delicate springy texture and succulent as well. The pork jowl has the perfect ratio between fats and meat and basically melts in your mouth. Love the buttery flavour of the smooth mash potatoes, and the paprika oil add a subtle spicy kick to the dish. Main – braised beef cheek, olive oil crashed potato, baby carrots and passion fruit. A must try dish for a beef lover. The beef cheek was so soft, I only need my fork to peel each layer of this dish. Accompanied with sweet baby carrots and rustic feel of crushed potatoes. The intense sauce is beef stock reduction finished off with red wine and passion fruit for a twist tanginess. Dessert – dark chocolate ice cream, char-grilled banana, gorgonzola cheese and caramelised butter. It was not the ending that I expected. The heat from the grilled banana actually melted the ice cream. Instead of dark chocolate ice cream, it turn out to be dark chocolate cream. The pairing of intense pungent flavour of gorgonzola cheese with dark chocolate “cream” provided a unique yet pleasant finish to the dish. Dining at Pool Grill, you will have a great view of the swimming pool of Marriott Singapore Tang Plaza Hotel and the view of surrounding buildings in Orchard Road, such as Ion Orchard and Shaw House. We were seated in the huge Chinese style pavilion, where it can seat about 20 people. To keep everyone cool, an unique fan called “Big Ass Fan” is used. It control the temperature nicely without messing up your hair or blowing everything off the table. It was indeed a pleasant outdoor dining experience. According to our host, the gazebo is frequently used for wedding solemnisation. Overall, the menu of Flavours of Spain at Pool Grill is a reflection of Chef Albert new insight to Spanish Cuisine. His signature of fusion of Spanish food with Asian ingredients. At the fifth floor of Singapore Marriott Hotel, which is mostly consists of hotel rooms, one is surprised to find a alfresco restaurant, located by the pool. The restaurant decorated in mostly in white, given off a relaxing feel. Although there is no aircon in the restaurant, the place is quite cooling which is helped by the huge industrial fan on the ceiling. The restaurant offers a limited ala carte menu, set lunch and set dinner too.The restaurant overlooks the pool which is lighted up at night. One could also see the light-up from the surrounding buildings.Tonight all four of us are having the dinner set which costs $48++ per set. With the entertainer mobile application, one is also entitled to 1-for-1 dinner set. It is a great deal for us, as it means that we will be paying half the price of the original price. The set dinner consists of a starter, a main and a dessert.We start the meal with bread, served with butter, olive oil and assorted nuts. Both are refillable. I like that the bread is serving pipping hot and the texture is soft and pillowy. We can't help asking for a second serving. We are also served lemon flavoured iced water which is refillable regularly.For the starters, there is 3 choices available.Wild Mushroom Soup, Shaved Truffle ($14.50 A-la carte)The soup is rich and creamy, and great with the truffle oil on top. There is a sizeable piece of shaved truffle in the centre.Caprese Salad, Buffalo Mozzarella, Pickled Onion, Zucchini, Pesto ($22 A-la carte)The plating is very nice. The cheese is soft and not too strong in taste and balance quite well with the pesto sauce.Pool Grill Caesar Salad ($19 A-la carte)Romaine lettuce, parmesan, anchovy dressing, croutonsWe do not get to see the salad being made in front of us as reported in other blogs. The salad is presented in a simple way, but tastes refreshing and crisp.For the mains, there is also 3 choices available.Homemade Spinach and Ricotta Ravioli, Fresh Tomato, Basil Sauce (V) ($26 A-la carte)The ravioli looks a bit dry when served. Inside it is filled with rich and creamy filling. The taste is not too strong in the cheese taste.Norwegian Salmon, Heirloom Tomato sauce Vierge ($32 A-la carte)The salmon is cooked just nice, juicy and meaty, while the skin is light and crispy.Roasted Baby Chicken Breast and Confit Leg, Potato Puree, Shimeji Mushrooms ($32 A-la carte)Its serving is the biggest among the 3 mains and one can barely finish it. The chicken is quite tender and flavourful.Lastly for the desserts, there is 3 choices available.Banoffee, Toffee, Banana ($14 A-la carte)This is the recommended dessert from the staff. It is quite a well balanced dessert without feeling too sweet or creamy. Like the popping effect of the chocolate balls in the mouth.Chocolate Raspberry Trifle ($14 A-la carte)It looks like strawberry flavoured jello-o, topped with whipped cream. Not too sweet and quite nice.Vanilla Creme Brulee, Fresh Berries ($16 A-la carte)This is the least favourite out of the 3 desserts as most of us feel that it is a bit too sweet. I feel the sponge cake which the fruits sit on, is lacking of texture.Overall the food is great and well valued for money. I am surprised that the place is not crowded. Through out the whole meal, there is only 3 other tables occupied besides us. So it is easy to get the attention of the staffs. The staffs are friendly and make good recommendation. The place is quiet and cooling. Great for one to enjoy a meal smoothly.

A week back, I chance upon having my first fine dining experience at Pool Grill restaurant located in the heart of Orchard at Marriott Hotel. To kick off with my verdict of the outdoor restaurant, I would like to highlight that the place was filled with elegant dining set complementing with the sky pool which gave audiences a cozy ambience.Beside the ala cart menu, Pool Grill Restaurant do serve 3 meal course set dinner menu which consists of 1 Starter, 1 Main and 1 Dessert. The chef restaurant will prepare dishes based on customers’ preference. Likewise, their service was fast and excellent too. Indulge with my dining moment at Pool Grill, I would like to share with you guys the dishes I had tried during my tasting session. THE STARTERI have chosen Pool Grill’s Caesar salad to be my starter dish. Despite the salty taste of the fish in the salad, the dish was well-seasoned and fresh and it is good for appetizer.Chef’s crafted soup of the day Duck liver and foie gras parfait, consommé jelly, chutney, crostini Pool Grill’s caesar salad, Romaine lettuce, parmesan, anchovy dressing, croutons THE MAINNext, I selected pan roasted butterfish for my main dish. I am totally in love with the sweet taste of the tender butterfish, thus it comes with cauliflower puree and Shiraz reduction to make the dish look healthy. Fish lover will love it! However, there are other two selections which are ‘braised boneless beef short rib’ and ‘roast chicken breast’ and are definitely worth the price! THE DESSERT ‘Cheese Board’ is one of the recommended dessert dishes to end off a delighted meal. It is a selection of artisanal European cheeses, crackers, homemade nut confit and quince paste. It tastes savory and is value for sharing. Yummy! I had a delightful dining experience with my friends at Pool Grill @ Singapore Marriott Hotel. Thumb up for the excellent services and delicious dishes. Concurrently while having my three-meal dinner course, I am able to enjoy seeing lights display from the opposite Ion Orchard and also feel the refreshing wind cooling the outdoor ambience.
