Sautéed Shrimps with Baked Beans in Tomato Sauce
Serves 4
Ingredients
12-15 medium prawns, shelled
One red capsicum, diced
One yellow capsicum, diced
230g Ayam Brand Baked Beans
3 tablespoons Sweet Chili Sauce
1 tablespoon Lea & Perrins sauce
1 tablespoon sugar, to taste
2 tablespoons olive oil
2 cloves chopped garlic
2 chopped shallots
2 tablespoons chopped spring onion
1 tablespoon chopped red chilli
Chinese parsley, for garnishing
Directions
1. Pan fry the diced capsicums with a tablespoon of olive oil and sprinkle it with some salt to taste. Remove and set aside.
2. Mix baked beans in tomato sauce, sweet chilli sauce, L&P sauce and sugar.
3. Heat wok until hot. Add in prawns, pan grill both sides thoroughly. Set aside.
4. Add chopped garlic, shallots, chopped spring onions and olive oil into the wok. Stir-fry until aromatic.
5. Return the grilled prawns, fried capsicums and mixed baked beans sauce mixture. Stir-fry for 2-3 minutes over high heat. Garnish with Chinese parsley. Serve hot.
Baked Beans Crab Cakes
Yields 10-12 Crab Cakes
Ingredients
2 large eggs
3 tablespoons mayonnaise
3 tablespoons Dijon mustard
1 tsp Worcestershire sauce
2 tablespoon NOMU tomato and chilli pesto mix
1 teaspoon ground black pepper
1 chopped onion
400g surumi crab meat flakes
100g minced prawns
200g Ayam Brand Baked Beans
135g breadcrumbs
62g self-raising flour
40g butter oil
Some butter for pan-frying
90g breadcrumbs
1 tablespoon Paprika powder
1 teaspoon Oregano leaves
Directions
1. Fry minced onion with oil until slightly brown and softened. Let it cool. Whisk egg, mayonnaise, mustard, Worcestershire, NOMU tomato & chilli pesto mix, salt and black pepper in a bowl.
2. Add in fried onion, crab meat, baked beans, bread crumbs and butter oil. Stir and mix well. Add 135g breadcrumbs to keep it together. Form mixture into 10-12 small balls and form into patties.
3. Place patties on a baking try lined with wax paper. Cover and refrigerate for one hour.
4. Mix 90g breadcrumbs, paprika powder and oregano leaves. Coat crab bean cake patties in coating crumbs. Melt butter in a non-stick pan. Fry the crab cakes using medium high heat until golden brown on both sides. Serve hot.
5. Alternatively, you can air fry the crab cakes or bake it at 180 degrees until golden brown.Written by Rachel Wong
