I have heard about the oyster omelette (orh jian) here and hence decided to order one plate to share between me and my two other friends. There is quite a wait for it, so the idea is to order it halfway through your meal so that it will be ready once you have finished your main meal.The oysters here are quite large and you can smell it from afar as it was being dished to our table. There is some lightly charred bits of oyster and egg and it is really that which makes it so much more tasty. The starch is also not too much, just enough to allow the eggs and oyster to be held together. Every bite of the orh jian is an enjoyment and when you bite into the oyster, the burst of flavour is simply undescriable. The chili dip is also sourish and spicy and it helps to enhance the juiciness of the orh jian. This is definitely one of the best orh jians I have ever tried.
