I ordered the larger plate of fried kway tiao ($5) because i queued for about 20 minutes (service was rather slow). The fried kway tiao was fragrant and the pork lard enhanced its taste. The kway tiao had a sweet taste with a hint of the wok's breath. It was also very moist. The various ingredients such as the chinese sausage, beansprouts, fishcakes were fresh too. I'm sure that alot of us have heard of No.18 Zion Road Fried Kway Teow as they are given words of praises as one of the best CKT (Char Kway Teow) in Singapore. These are supported by the award certificates pasted at the stall.It is not difficult to spot this stall as it is located at the corner and with long queues most of the time. Comes in order of $3, $4 and $5. Each batch of CKT is cooked based on order. I'm quite surprised that the portion for the smallest order is generous, including its ingredients like cockles, slices of fish cakes, lup cheong (chinese sausage) , eggs and bean sprouts.Fried Pork lards had completed an authentic plate of fried kway Teow given an additional fragrance. It plays an important role satisfying the taste buds with its unique aromatic flavors. Though it was oily, it did bring out the orgins taste of a simple plate of CKT. The wetness level is acceptable thus making such dish rather addictive.Sad to say, usually local delicacies that are delicious are sinfully high in cholesterol and fat. Food cooked with lard tend to add another dimension to the dish, the magical fat somehow has the ability to perk up the taste buds with its aromatic flavour and make ones fall in love with the food. Lard is the essence of a good Fried Kway Teow and no matter how good your culinary skills, a plate of Best Char Kway Teow without lard will likely a mediocre. Of course, there are Char Kway Teow replaced the lard with healthier vegetable oil; one of the good examples is the famous 91 Fried Kway Teow from Golden Mile Food Centre. However, we think there is always a difference when compared with those cooked with the sinfully high cholesterol saturated fat. This is absolutely the best char kway teow I have eaten so far, and is also my childhood favourite. I guess that sort of played a part, cos despite trying char kway teow from other places, none can please me other than this stall. I still like this best! Fried to perfection with a slightly moist texture with just the right amount of dark sweet soya sauce, it's flavourful and aromatic. You can smell the wok aroma from afar. The char kway teow looks very appetising too! I always order mine without the cockles, but it is still as yummy! There is always a long queue during peak lunch and dinner hours... This fried kway teow was absolutely delicious! The serving was indeed quite generous for $3, and the kway teow was neither too oily nor dry for any one to dislike. In an essence, it was done just right - well balanced and moist enough. Each bite you take is a savoury one, the hum were fresh and tasty, the fish cakes were springy and the sprouts added crunch to the whole dish. 繼續閱讀
