The founder of Anzu, Toshiki Hanada, is the descendantof 3 generations of bakuro.
A bakuro is one who is skilledin discerning the quality of livestock. In 1906,
Toroku Abe started the bakuro trade. Leveraging generations of expertise, Hanada sought the tastiest pork from different regions when he founded Anzu.
From Hokkaido in the north to Kyushu and Okinawa in the south, and beyond the shores of Japan from countries like the United States, he was constantly in search of the best pork for his kitchen.
Anzu delights in continuously serving our guests with quality pork procured with the heart and prepared with the skills of an artisan.
