"Fuwa Fuwa" (fluffy) Hoshino Souffle ($15.80) - Cheesy souffle on top of tomato fried rice. Very soft fluffy souffle.Pot baked matcha souffle ($9.50) - looks overcooked, does not rise as expected. Sink even further after photo is taken. Does not taste soft enough. Pancake souffle style with Chocolate Banana, served with softee ($13.50) : a very thick pancake, crispy outside but soft cake inside. Remind me of Kueh Balu. Very nice with the ice-cream.

Heard many raves about the lobster bisque spaghetti. Was actually skeptical about eating spaghetti at the Japanese place but there isnt much food to choose from as the portion looks tiny. The friends ordered the creamy pasta and french toast. Personally, i find the other pastas are too creamy and the milk taste is very strong. However, my friends love it that way. The lobster bisque spaghetti is worth every penny as the portion is big, and they are generous with the soup, so its kinda like paying 2 dishes for a price. Was quite worried at first about the lobster bisque soup but to my surprise, it is awesome!

The iced matcha latte is good as well as it is creamy. Or at least, its the real matcha taste as many places call their matcha as green tea. One cup is definitely not enough.

I dont know how to appreciate black coffee but the friend who ordered this said its good and worth it as its 50% off the price for every refill - drink to your heart's content.

The souffle is very light and the vanilla taste is quite bland. Hardly eat souffle, but the bowl was scrapped clean by the friends - i supposed its good?

Originally we were asked to wait as they had to clean the tables and full house. But 10 minutes later they had a unoccupied table, I asked why weren't we allowed to be seated, the manager claims it's a table for 4 and there's 2 of us , when the next similar table had 2 people seated as well! so much for double standards. Service staff told us we will have to wait 30 - 40 minutes. My husband timed their claim because he wasn't too pleased with the poor service attitude. Manager gave us a little p

Manager gave us a little priority and delivered our desserts early within 15 mins with no quality compromise. Overall the taste was great, everything was perfectly cooked and ice cream was not icy. We're impressed.
Manager takes his work seriously as we noticed him reprimanding/briefing his staff outside away from the location for probably something he messed up.

Was passed by the newly renovated Plaza Singapura, saw many new Japanese eateries at Level 3 & 4. It was too tempting to try all the restaurants. So I start with Hoshino Coffee at Level 3.Can't resist to see the replica dishes at the entrance.So decided to have our dinner there. The table for 2 is a bit small. I passed by this cafe on a shopping trip and saw a long queue. As a typical Singaporean, long queue meant good food hence I suggested this place to my friends for our last gathering. The food display was also a pulling factor, everything looked so good. Anyway, one friend arrived earlier, 6.40pm - and we got ourselves a table at 7.20pm.

On a flip of the menu, there was only 1-page of main course that you could choose from - and that was a variety of omu rice and spaghetti. I had the Lobster Bisque Soup Spaghetti and my friends had the Tomato Cream Omu Rice. The manager who jotted our order was thoughtful to inform us that the pancake would need 30mins to prepare.

Okay, a little drama began when we were ushered to our seats. 4 of us were allocated to this sofa seating, with low sofa and armchairs and table. It would be nice if we were just there for a coffee but we meant to have dinner and desserts - the low table and seats were just not comfortable. We signaled a wait staff and told her our preference to sit at a proper table (for 4) which they had just cleared. She told us 'No' and couldn't tell us why when we prompted her. Another wait staff came and gave us some funny explanations which we couldn't understand. We murmured among ourselves and that somehow got the attention of the manager and she helped us with our request.

My spaghetti was al dente, complemented with a rich savory base. Prawns were crunchy and cooked just right.

We requested our double pancake to be served right after our main course arrived hence we did not wait for long after dinner. It was served with a little butter cream on the pancake with a mini jar of maple syrup by the side. Pancake was spongy but it did not wow me - and it somehow reminded me of the fast food chain hotcakes.

Speaking of the food, the baked curry rice was delicious as the beef curry sauce was really thick and savoury. The soft egg yolk enhances the richness of the rice. It has been years ago since I had my Japanese curry rice.

The pancake souffle is nothing spectacular and was a little tad dry and less fluffy than a mc pancake. Hence had to rely on the brown sugar syrup to finish this although they gave us the maple syrup which we did not choose. The puny little salted whipped cream was definitely not enough to go with the pancake. But to pay for extra cream? Definitely no way.

Fortunately, the matcha souffle saved the day. Even though it did not rise to a considerable height, it was filled with sweet matcha custard and thus this warm pud was really comforting one to enjoy. The only dish that I would recommend one to try.

In short, this place is definitely not worth queuing so better to avoid peak hours. I think it is very adventurous or bold for a newly opened restaurant to offer so many soufflé items as they require long waiting time. However, this must be provided that the orders run smoothly without missing out or leaving out any item, only to have realized that the kitchen had left out the order after customers' reminders.

Not sure why they priced it this way, but it’s definitely more bang per buck to get two pancakes!You will need to wait at least 15 mins for this dish to be served, because it’s freshly made on the spot. You will need to wait at least 15 mins for this dish to be served, because it’s freshly made on the spot. The pancakes are really fat and thick! They are also immensely enjoyable, since the insides are really fluffy but the outside edges are baked to a nice crispy golden brown. You can choose to have your pancakes served with maple syrup, honey or brown sugar syrup. I had maple syrup and found the pancakes especially the fluffy, cake-like insides easily soak up the maple syrup and goes really well with it!

Seriously impressive! You wouldn't believe that the queue speaks for itself. I'd thought, well, it could be that people are simply curious about what this 2 week's old is capable of. And when the line starts to form, more people just keep queuing without a single complain. It was a late lunch thingy after a movie show - making my way there like a supersonic. This is like crazy, the snaking line - almost a L-shaped by now is forming right before me. I have seen the same earlier in the morning at 11.10m (the outlet only opens at 11.30am, mind you!) when I drop by to ask if I could make a reservation for 3pm but was turned down politely which I clearly understand why, now. I know this is what I have to eat despite that nagging throat discomfort & joined the queue - determined to find out if they are as good as they claimed.

Never mind about the long wait as it is moving rapidly. I am no.12 in line and it took me slightly more than half an hour's time to get a table. Not sure if that sounds reasonable to you but at least it didn't irk me - surprisingly. Why was the line moving fast unlike the one seen at Ipuddo @Ion or Tonkotsu King @Orchid Hotel, in case you asked. This is because most of the diners came for a quick bite at this hour - tea/coffee & pancake/souffle or parfait and leave after they have been satiated and so, they seldom hoard the table. Anyway, I was told that they do not accept bookings on weekends and only allow 3-6pm reservation on weekdays. I guess this is fair.

The interior is not entirely small but having a 3 separate dining space. The main hall sits most of the diners with wooden table and leather padded seats. It emits a brighter and casual feel, probably the area is not constraint by a stiff ceiling but an architectural glass rooftop in the mall that illuminates the stretch with a natural glow of sunlight. There are 4 booth seats which is most ideal for a gals-get-together session, I figured. Another hall appeared slightly smaller, is a little cramp I find (praying hard my table wasn't gonna be there). Facing the open-kitchen, diners will be able to see the cook behind the stoves and barista making cups & cups of that aromatic Hoshino brew. There are a couple of table seats and long couch seats as well - the surrounding is a little dim. I'd prefer the smallest dining corner that comes with leather long couches - thick pocketed seats kind. A place that call up every sleeping bugs in you - warm, dim and laid back. It will be a disaster to place me there, I think I can glued for hours.

The menu was straight forward, without fanciful hard to understand dishes. Zoom right into my orders and wave for the staff, the lady clad in chef suit came to me (gosh, even one works in the kitchen has to take time to manage the hall during peak hours?).. aw.. but she was very well-mannered and patient when confronted with inquiries. In fact, no one was seen idling - all the wait person served with pride, promptly and in an unhurried manner. A remarkable service team (so much better than Paul when it first opened but heh they have improved too - I will speak separately in another post).

Totally famished but the food arrived in 20mins, saves me from antacid. Reasonably time I thought.

I admit I felt a little uneasy when I picked that unfamiliar dish - Fuwa Fuwa. But the truth tells me that feeling has been unwarranted. I was rewarded handsomely and much more than I could imagine for all those wait time I have spent an hour ago. The most raved about "fluffy savory soufflé" seriously did not put to shame. Not only that it enticed me with its huge golden puffy bonnet but I was completely sold by its astonishing delicate flavors This is one dish I wish I had on my last - cottony & airy, formidable without a trace of deflating. It is no wonder that people called it the "cloud", but I think it's me that's on Cloud 9 at every bite. Instead of baking it like an Italian classic with white sauce, this one has a tomato version in it. It was filled with incredible moments - spooning the whites like a mass destruction into that light feathery foam, trespassing to get to the bed of the baking dish. The gems hidden under these soft foams have never been so right. Tomato sauce infused - each grain was plump, tangy-sweet, not soggy. Its flavor was enhanced by strips of middle eye bacon and mushroom bits. Together with that eggy, Parmesan cheese soufflé, a divine marriage left unchallenged by the sweet version. Impossible not to eat, I think I can have 1 on every other day. A one to die-for dish at Hoshino Coffee.

A couple of spaghetti dishes if you like, other than "Omu" rice (omelette rice) or sandwiches. Of the 7, I had the Lobster Bisque Soup Spaghetti. A french dish but cooked the Japanese way for a lighter taste. Instead of highly seasoned, this one prepared with tomato and finely chopped mushrooms comes with a milder liquidized cream but rich crustaceans flavor. I find the soup a little offensive (even while its still steaming hot) while my dining partner finds it delicious, so I guess it's a mixed conclusion. It was not entirely bad - at least the spaghetti is cooked the correct way, I guess I just didn't have the mood for such a sophisticated seafood thing today.

String along with others, I ordered a pancake soufflé, this time a more familiar sweet version! Not the plain ones but a more elaborate classic with a tropical touch - mango. A second ultimate comfort of the day, the first being the savory soufflé! Almost every table goes for the plain; either a single or doubling up while very few had the more fanciful. Mine - dressed up with mango fruits and handmade whipped cream was a pure decadent! It was pity that the softee machine has broken down and I was told to change to a whipped cream instead. Can you imagine how well-received they are. I have been advised to remind the kitchen to start preparing the soufflé when I was half way into my main course. It was like taking a number queue to a soufflé! I was asked to wait for another 15mins by the apologetic service staff. Not an issue at all, I said to myself because the end result was a light and airy inflated sponge that was unforgettable. The only negative I had was the fruits. Upon checking, I learnt that frozen mango fruits are used while the kiwi are fresh produces. I'd prefer ripened fruits atop my dessert, not raw and crunchy. Worst, the mango has a weird over-frozen texture makes them taste rubbery. However, the homemade whipped cream was smooth and not cloying. Undeniably, these fluffy treats really know how to please anyone, including a group of Japanese ladies who are spotted beaming away at their Matcha soufflé. Well, in my case, I would opt for a plain pancake without toppings, else a softee if anything. But do not leave the place without a cup of Hoshino blend.

Whaff that strong Hoshino caffeine scent right in front of me - that was one of the distinct characteristic while waiting in line. Carefully selected coffee beans were roasted over direct flame and then hand drip to a good-bodied brew. The blend has got a rather pale flavor less rich as compared to Oriole's. Milder acidity but has a lingering smell. I guess the Japanese adores this light perfumery beverage, much than any of us. I am good for that 10g but if anyone wanted an extra brew, there is a 50% off for a refill.

I will back for another round of guilty pleasures! It is unquestionable that these notorious soufflé-style selections are truly to die-for. And you will be most glad to know that dining at Hoshino Coffee was never an aggressive experience but a slow and enjoyable process.

You will not miss Hoshino Coffee, it’s located on the third floor in Plaza Sing’s swanky new extension. There is this really eye catching display of their food items at the entrance that draws potential customers in.The decor is very similar to the Shibuya outlet I went to. Lots of wood, warm lighting and even the furniture- the red leather seats and wooden tables are similar. (Even the coffee cups are the same!) I guess it’s their trademark image and it’s all faithfully replicated here in Singa

I believe this coffee joint is well known for their hand drip coffee and their fluffly pancake souffles. First off, I had a hot cup of Hoshino Blended Coffee ($5.80) They claim that their coffee beans are specially selected and their coffee are specially “hand-dripped”. First off, this coffee blend is tailored to Asian tastes, so it’s less acidic/sour than western coffee but nonetheless, pretty potent in the caffeine department. It’s a really aromatic blend and it provides some very intriguing lingering aftertaste. Some may compare this cup to their usual kopitiam coffee and wonder if it’s overpriced. Well, many people actually pay a lot for their starbucks coffee. Also, I realised the coffee is actually much cheaper here compared to the cup I had in Shibuya (about SGD9 there!). It’s of the exact same portion, same cup, I think it tastes similar but memory fails me here. And you can get a second refill for 50% off here! So whether you are willing to pay $5.80 for a cup of premium coffee, well it’s really subjective. They also serve a variety of tea (their matcha teas look really good but be prepared to pay more!)

This is Hoshino Spaghetti ($14) and it actually looks very impressive and big at first sight. It is served al dente with a curious mix of ingredients: eggplant, bacon, shimeji mushroom, sausages, tomatoes and ONSEN EGG, sprinkled with copious amounts of sesame. Well yes, the portion is generous and there is a nice mix of fresh ingredients, but no offence I think this could be the pasta I will make with my dinner leftovers from last night, except perhaps I won’t be able to make that perfect onsen egg. It still makes a wonderful and tasty dish, but I might want to try something else the next time.

For dessert, I decided not to go with their souffle pancakes; I decided it is more worth it to eat with friends, since a double serving costs $12, compared to $9.80 for a single piece. BTW, there pancakes souffle style and pot-baked souffle are freshly baked on the spot and will take about 20 minutes to be served. So I ordered their tantalizing looking Matcha Souffle ($9.80):

It was served fresh from the oven, and was still warm when I sunk my spoon into it. The top had a nicely burnt crispy brown layer. Venture further into the core of the souffle and you will find a rich, soft matcha custard oozing out. This dessert isn’t overly sweet and there were hints of matcha flavour, which I would have preferred to be stronger. The insides were a bit like molten egg custard, and it really goes well with their coffee. For a moment, I was tempted to get a coffee refill.

Service wise, it is clear they are severely understaffed. I visited on a weekday evening just slightly before dinnertime. There were only 3 waiters to handle the entire dinnertime crowd, and the kitchen became noticeably slower. The food items took some time to churn out the mains and desserts and I noticed many diners had to wait. But it’s their first week here in Singapore, and I guess they will iron out these problems in future. I will be coming back for pancakes the next time!
