The zen of noodles is in eating Japanese chilled or soup soba, freshly homemade and cooked at Shimbashi Soba restaurant. The Soba Master selects fragrant buckwheat from Tasmania for its freshness, fineness and nutrition. Tasmania’s cool climate, fresh air and clean water source is an ideal place to cultivate buckwheat. 繼續閱讀

Visited this restaurant at basement of Paragon. Crowds is full and have to wait for about 10 mins. Place is well decorated and with a high platform too. Started to order their signature tempera soba and Shimbashi combo soba set. Tempera soba ($21.80)The soup texture is very refreshing and light. There is no MSG stated on the wall too. The tempera consists of vegetables, prawns, green beans, mushrooms etc. Very nice after mixture with tempera sauce. The noodles is hand made and slightly hard type. But is very nice. Shimbashi combo soba set($21.80)The serve with 2 type of soba noodle. One of is is cold and hot type. The taste is different as I like cold type of a lot of ingredients inside and tofu slides. The tempera set served consists is actually same as above. Very nice for those who like soba noodles.Lastly requested for side dish , Manju desert 2 and Shimbashi roll. Both are very favourable for me. The taste is not so sweet and look alike Mochi but Black Semane seed taste. Overall is a Good recommendation for soba lovers. 繼續閱讀

Attracted by the unique handmade Soba, we were able to see the chef making noodles on the spot through the transparent glass at storefront. Bringing over rarer traditional Japanese dishes, Vegan may felt great to know that Shimbashi provided some meat-free options too. Ambience inside was relaxing and service was prompt, waiting time was about 15 minutes.Menu was extensive, yet I picked this. Chilled noodles with Natto, Lady’s finger, Seaweed and Japanese Yam, it was performed in dried version. Undoubtedly refreshing Soba, taste was light and decent. The main point was healthy, it lacked of heavy-seasoned flavour. The portion was not huge for $17.80, may enlarge the bowl by paying additional $5.00. If looking at quality, Shimbashi Soba was certainly fine which I had ever sampled. The only setback would be the price, it was quite expensive. 繼續閱讀

Passed by this place in paragon and the desserts look good so I went in to have some. They have this tea time set from 2.30pm to 5.30pm, which includes a dessert of your choice and a drink - ocha (hot or cold), for $7.80, or if you prefer handrolls, for $9.80. I got the set with the drink, and chose their parfait, which costs $11.80 if you order ala carte, so it was a good deal. Fruits and matcha ice cream were normal, I liked the green tea cheesecake and tiramisu especially, green tea taste very strong. 繼續閱讀

I am always a fan of Japanese food and I love soba especially. We went to Shimbashi Soba for dinner where I ordered the soba with fried tempura set. It costs around $20 for the set of food which I felt was reasonable as it taste really good. The soba is fresh and tangy, while the tempura is crispy and well fried. The ambience of the restaurant is nice and makes a great place for gathering. 繼續閱讀

The soba served here is excellent! It is freshly milled, freshly handmade for the day. It is not overcooked, so it's not too soft and retains its chewy texture. I also like the soba sauce here. You are given a raw quail egg to mix into the soba sauce which makes the soba sauce a little thicker and more flavourful. I really enjoyed slurping up every last strand of soba dipped in the sauce. After your soba meal, you will be offered hot soba water. It is essentially water used to cook the soba in and we were told it retains a lot of nutrients and vitamins. You are suposed to mix it with the remaining soba sauce that is left for an after meal drink to aid digestion. I'm a little skeptical about the nutrients and aiding digestion part, but the special "soba tea" was a tad salty but not too bad at all!And if you order any two soba set or set meals, you will be entitled to get a mini dessert for an additional $4. We had the Mini Anmitsu which was a delightful dessert served with fresh fruits, mochi and ice cream, bringing a satisfying end to our meal. The service here was also very good; we had a very enthusiastic waitress serving us and she explained the dishes patiently to us and also asked if we enjoyed the meal.It gets really crowded during lunch and dinner hours but if you are able to pop by at 3-5pm weekdays, there are special promotion sets available. 繼續閱讀
