There are two types of porridge, the Teochew and the Cantonese. Teochew porridge is more like rice with excess water. It is normal eaten with small dishes, usually preserved and salty kind like salted egg etc. Cantonese porridge or otherwise known as congee is very fine, like rice puree. The fish or chicken, sometimes century egg, are cooked together with the porridge. A good congee is one that is fine, smooth and easily swallowed, without having to chew.I could say that the congee from Yong Xin fitted very well in the above description of a good congee.Today, I went to West Coast Market Square and ordered two bowls of congee from Yong Xin, one fish and one chicken. I requested to add an egg to each.When the piping hot congee was poured into a bowl with a raw egg, I quickly stirred the mixture. I like the eggyolk stirred into the congee. Usually, some 'you tiao' would be added to the congee, but for this stall they gave me a whole half of a 'you tiao'. (pls refer to picture)Hmm... perfect.Must try! 繼續閱讀
