First off, there is a lack of balance in its flavor, in that the tuna used was inconsistent and some of the rolls had an overwhelming taste of seaweed. The rice was cold, again disrupting the delicate balance of the dish. Lastly, there was a clear lack of physical strength put into rolling the sushi, resulting in a brittle structure that easily falls apart. The tiny air pockets trapped between rice grains also affect the overall taste slightly.

With that said, the Sushi does score on many other factors, all of which remained consistent with the other dishes I ordered. The rice used was of good quality (which is precisely why it shouldn't be served cold to demean its taste). It had just the right amount of stickiness, chewiness and fragrance. it was also seasoned well by the chef(s) to have just the right mix of vinegar, salt and sugar, resulting in the subtle but sophisticated style of smooth, ever-so-slightly sour-sweetness that any properly done sushi rice should have. The Tuna was also of good quality, with a robust, fatty taste that melts in your mouth and leaves a delicate lingering aftertaste in your mouth.

The Grilled Salmon with Spicy Miso ($8.00) was nicely grilled with a crispy skin but retained its succulent texture on the inside. The fish was lightly marinated with Miso which gives it some flavour, but not so much that it would cover off the signature taste of salmon. Japanese-style chili powder is sprinkled on top, giving the fish a moderately spicy sensation.

Illustrations on the menu showed a full cup of rice with Eel Mini Rice ($4.00) presented over the rice, but when it came to the table, it was more than just minuscule. With only a pinch of rice served, this definitely looks smaller than any kids meal. However, it is definitely a good size for those who just wants have a try of different items as it is barely filling. The Unagi was well marinated with a sauce that really brought out its flavour, though some pieces were a tad scaly.

Itacho Sushi dont allow reservations therefore i waited 30 minutes before i can be seated inside. Ordered the steamed egg which has 3 pieces, Unagi sushi, California sushi and fish egg sushi. I like all of them because there are exclusively hand made by the chef. The egg sushi is moist and warm unlike others which can be dry and not tasty at all. This is my first time eating at the Bugis Itacho. The queue was quite long (understandable, given that it's Friday night) and it took a 45min wait before I could get in. My friend and I had mostly sushi for dinner, with some sides and random orders. The tuna sushi, salmon sushi and fatty tuna sushi was good and pretty fresh. However, the mini don was too small (with too little sashimi bits).

Firstly, there is a really very long queue for Itacho during peak dinner hours, once I gave up after queuing halfway; so it is best not to go during peak hours. I was craving for some appetizers and decided to order their scallops - scallops were fresh, but the portion was rather little. I also had some sushi, including the one with the beancurd skin. Nothing special about their sushi though.

We decided to queue for this japanese restaurant. The queue is approximately 15-20 minutes before we were given a place to dine. My friend has to go to their counter and get the tablespoon.One of the reason is because the restaurant is full house.

We ordered handroll as I was craving for salmon sashimi.I still prefer salmon avocado with mayonnaise and ebbiko handroll. Nevertheless the handroll seaweed is crispy and the salmon is quite fresh as well.

Crab meat salad @ S$4.80
Good start as an appetizer before the main course. It's quite refreshing and the crab meat, cucumbers are nicely sliced into thin layers and mixed well with the mayonnaise sauce with the ebbiko topping on top of it.

Since this is a special offer, every customer is only applicable to 2 pieces for the sushi.
Taste wise is acceptable.
Squid leg is chewy when we bite.Salmon with soy sauce taste fine for me but i would prefer to go for salmon sashimi.
Binchou Tuna with Citrus Sauce @ S@2.50 per pc
It's a bit dry for me and we are able to taste the citrus sauce.
Not much preference of this sushi but it definitely taste fine.

Roasted scallop with flying fish salad @ S$1.50 per pc.Roasted scallop is nice. The scallop is quite thick and you able to taste the sweetness of the scallop. The flying fish salad sauce added flavor onto the taste and also the colour of the sushi.

Curry sliced pork with rice @ S$11.00 per serving.
Presentation is fine and the taste is acceptable for my colleagues. I didn't tried so no much comment from my side. But my colleague commented that the pork are nicely sliced and they are able to taste the softness texture of the meat and able to chew easily.

As for my own preference, i wouldn't spend time to queue for it. Price wise is affordable as a chain of japanese restaurant. The restaurant is located at basement of Bugis Junction Shopping mall. It is accessible through Bugis MRT Station.

Service staff wasnt good but food taste good. the staff didnt really bother to look at the customer and they juz walk pass like u didnt call them. need to take effort to call them. no complain of the taste of the food . i like the oyster with udon and their salon sushi. price is reasonable and location is accessible. for japanese food i think service is very important .

The rice and the ingredient ratio was a lot better than many of the other sushi chain restaurants. And the service is excellent too.The salmon taste great and the size was quite huge. Ordered a plate of raw sushi. It's so yummy and fresh! The hotatae is huge and tasty. The meat is really sweet and succulent. The rice too is very soft and delicious. I ordered their shrimp sushi as well. The translucent skin of the shrimp is so tempting. It is fresh, sweet and succulent upon first bite. I will dip them into the light soya sauce and pinch a little wasabi to taste. Fabulous!

I so love Itacho Sushi. Wish I could try everything on the menu, but I need to have lots of cash to do that. A good place to splurge once in a while on good sushi. Come to think of it, the prices are rather reasonable given their fast service and FRESH sushi. No wonder there is always a queue waiting to go in.
