Because of Chinese New Year, Chef William is a busy man. Aside from preparing all the special dishes you can get to enjoy at their reunion dinner special, he is also busy promoting his new cook book, Taste of Nostalgia. But despite his packed schedule, he still takes the time off to share with his very own recipe and what he has planned for the CNY eve dinner!
This coming Chinese New Year, what are the yummy dishes we can expect at Saltwater Café? For CNY, I always prepare the traditional dishes you would expect to have for your reunion dinner. For the coming Dragon Year, we have the Braised Pork, Fat Choy. Of course, we also have some pork, prawn, and fish. We also have the popular ones such as shark fin soup, salmon, sashimi, etc. But a must-try in our restaurant is the seafood omelette, which will only be served on the eve of Chinese New Year. What makes this dish so unique is that only a few hotels prepare this dish for this occasion. This will be available at our live station. Do you still have available seats for guests? Our restaurant can seat up to 300 guests, so we might still have a few seats available. But if you want to grab a table, better book now. What about you, what have you planned for your family for this special occasion? Every Chinese New Year, I always prepare 2 special dishes for my family and relatives in our reunion dinner. The first one would usually be lobster or prawn dish. The second one would be a pasta dish. Penang, Malacca, or KL for some yummy Malay food. But if I have the time in my hands, I would usually head off to Taiwan. This country has a lot of good food and restaurants to try out. Food and culture wise, it’s almost the same as Singapore. It’s also an added plus that the weather there is cool! What are your biggest challenges in the kitchen? To cook a dish is easy, but to maintain its quality is the most difficult. That is my biggest challenge. And so, I challenge myself to do it better than before. I always set a high standard for myself.
