One of the determining factors as to whether the restaurant has good dim sums (or if the chef is good) has to be to try out its har gous!I like my har gous to have thin, yet firm skin that doesn't break too easily, but yet thin enough for the fresh and thick prawns inside.The har gous at crystal jade never let me down, as the prawns were large and fresh, and the skin was pretty thin and soft.One basket also comes in fours (instead of the usual 3 pieces at some other dim sum restaurants)
