Marinade, to be mixed together (this is based on my own estimation): 1 piece of red fermented beancurd, smashed 1 tbsp light soy sauce Slightly less than 1 tsp dark soy sauce 1 tsp sugar Dash of Shaoxing cooking wine
Method
1. Marinate wings with the seasoning overnight in the fridge. 2. Before frying, lightly coat each wing with some corn flour. You can just coat the skin side. 3. Drizzle 1-2 tbsp of oil into the HCP and fry the wings, covered, using medium heat. I placed the skin side down and cooked for about 10 mins, moving the pan to the left, then right during the last 4 mins. 4. Flip the pan and cook for another 5 mins. Note: Adjust the cooking time according to your stove heat. The skin side shd be crispy before you flip the pan.
