The recipe calls for 1 cinnamon stick and 3-5 cloves, but you can remove them if you don't like the taste. If you want, you can add them when frying the garlic and shallots.
1 kg chicken 1 tbsp ground coriander seeds 1 tbsp light soy sauce 1 tbsp dark soy sauce 1 tsp ground black pepper (Use above ingredients to marinate the chicken for a few hours)
3 cloves garlic, minced 5 shallots, minced About 1.5 tsp tamarind (add about 0.5 cup of water to it and remove seeds) About 1-1.5 tsp sugar (depends on your taste) 0.5 tsp salt (adjustable to your taste)
Method
1. Pan fry the chicken until brown. Set aside. 2. Fry garlic and shallots till fragrant and then add in chicken. Stir fry for a while then add about 1 cup water, bring to boil and then lower fire and simmer. 3. Add tamarind juice to the chicken, a little at a time and taste before adding more. Depends on your taste, you may add more. 4. Braise the chicken for about 20 min or till tender. Add sugar and salt according to your taste. Serve.
