Besides helping to promote good digestive systems, the consumption of cactus is known for improving the immune system, strengthen bone and joints, aid detox etc. The easiest way to consume cactus is to make delicious soup and that’s just what I did! It only requires 3 main ingredients – Cactus, Chicken & Red Dates (or Honey dates if you prefer).
Ingredient and Portion
1 Organic Cactus Leaf – about 300g (Its available in most supermarkets, or you can order online from the farm directly)
2 Chicken drumsticks
1 litre of Chicken stock (I made homemade chicken stock but you can always use ready made ones and top up with twice the amount of water.)
6 Red dates (seeds removed)

Optional stuff:
A handful of Goji Berries
1 knob of Dang shen (about 3 inch. Soaked and cut into 1 inch pieces)
6 pieces of Yu zhu
Seasoning
Pinch of Salt
Pepper optional
Method
Scrub the cactus clean and using a peeler, remove the skin. Handle with care as the cactus has a gooey slime and you don’t want to slip and cut your hand instead. Blanch with hot water before cutting it into slices for soup. Wash the rest of the ingredients. Put all the ingredients into a pot and simmer for 60 minutes. Serve hot.
