1 pack boneless, skinless chicken breasts 1/2 cups bread crumbs (can also use Japanese Panko bread crumbs) 1/2 cup grated parmesan 1/4 cup grated cheddar 1/4 cup grated mozzarella Plain flour to coat the chicken 1/2 egg, beaten Salt and pepper to taste Oil for frying Tomato sauce (can also use ready-made pasta sauce) - enough to spread on the chicken breasts
Method
1. Salt and pepper both sides of the chicken breasts. 2. Mix 1/4 cup of grated parmesan with the bread crumbs. 3. Coat the chicken breasts with plain flour, dip into the beaten egg, and then coat with the bread crumbs mixture. Leave to rest for 15 mins. 4. Heat the HCP with 2 to 3 tbs of oil on medium. Fry for 2 mins on each side. Do not let the meat be cooked; just want to achieve a golden brown color. 5. Remove chicken and place on a baking dish. Spread some tomato sauce on the chicken and top with the 3 kinds of cheese. Finally, sprinkle some parsley or dried Italian herbs on top. 6. Bake in oven at 225C for 15 mins until cheese is bubbling.
