Lamb chops are easy to prepare and take just a few minutes to grill. The key here is to manage the time on those lovely chops so they don’t overcook. A rule of thumb: better medium rare than well done.
Ingredient and Portion
6 lamb chops (frenched)
3 cloves garlic (minced)
1 sprig rosemary (finely chopped)
1 lemon
parsley (chopped)
salt, pepper and olive oil
Method
1. In a big bowl, put salt, pepper, olive oil, garlic, chopped rosemary and lemon zest. After zesting the lemon, cut lemon in half and squeeze the lemon juice of a whole lemon into the bowl.
2. Give the mixture a good stir and put in the lamb chops, coating them well. Leave for 10 minutes.
3. Heat up grill to high heat. Once temperature is stable, place lamb chops on the grill.
4. Grill each side for 2-3 minutes, for medium rare to medium doneness.
5. Bring out the chops and sprinkle chopped parsley for garnish. Rest for 5 minutes before serving.
