For that additional character in the pork chop's flavour, you can squeeze some lemon juice in the marinade.
Ingredient and Portion
500g pork collar (五花), sliced thinly

Marinade
2tbsp honey
2tbsp light soya sauce
Juice from half a lemon
Black pepper
Method
1. Marinate meat with the seasoning for a few hours.
2. Use medium heat, place meat slices in the pan. Abt 5 mins each side.

You can close the pan for the 1st 2 mins, then leave it open.  Only then will the marinate sauce caramelize and coat the meat.  Close the pan and flip, and repeat.
