400gm Prawns 20-30gm Sugar 100gm Cereal (Nestum) 15-20gm Milk Powder 1tsp Salt (adjust to taste) 40gm Unsalted butter (reduce or omit salt if using salted butter/margarine) Curry leaves (optional) Chilli padi (optional) Corn flour
Marinate (optional): Salt, pepper, dash of hua tiao
Method
1. Mix sugar, cereal, milk powder, and salt in a bowl and set aside. 2. Wash and pat dry prawns (deveined, if preferred). Marinate it lightly for 15 mins and coat with corn flour. 3. Heat Happy Call pan with enough oil for frying. 4. Fry prawns for about 2 mins on each side or until cooked. Dish out and set aside. (Coating prawns with corn flour and frying it gives a crispy texture. Alternatively, grill the prawns) 5. Clean HCP with kitchen towel. 6. Melt the butter on low heat; add in curry leaves and chilli padi followed by (1) and mix well (Can add more butter if you feel the cereal is too dry). 7. Return prawns to the cereal in pan and mix well.
