For the prawn paste 8 medium sized prawn chopped to paste form 2water chestnuts, peeled and chopped very roughly- optional 1 garlic clove, minced Few thai coriander leaves 2 tbsp fish sauce 1 tbsp corn flour 1 tsp sugar 1 egg white, lightly beaten Pepper dash Dash of sesame oil
You'll also need: 3 slices of bread (a day old, crusts removed, cut into triangles) 2 tsp white sesame seeds optional
Method
1. Marinate prawn paste with all the ingredients. Place in fridge for a few hours. 2. When paste becomes firmer, thinly spread on cut bread. 3. Sprinkle sesame seeds (optional). 4. Heat pan with oil , placing on the bread side first, use low fire as bread gets easily charred. 5. When bread is brown and crisp, turn to the other side. Once prawn paste turns red and surface has become brown, it's done!
