Chicken chop with a cheesy twist.
Ingredient and Portion
1 Boneless, skinless chicken breasts
1/2 cups Bread crumbs
1/2 cup Grated parmesan
1/4 cup Grated cheddar
1/4 cup Grated mozzarella
Plain flour to coat the chicken
1/2 Egg, beaten
Salt and pepper to taste
Oil for frying
Tomato sauce (can also use pasta sauce)
Method
1. Season a both sides of the chicken breasts
2. Mix 1/4 cup of grated parmesan with the bread crumbs
3. Coat the chicken breasts with plain flour, dip into the beaten egg, and then coat with the bread crumbs mixture (Leave to rest for 15 mins)
4. Heat oil on Happy Call Pan on medium heat and fry chicken for 2 mins on each side (Do not let the meat be cooked; just want to achieve a golden brown color)
5. Remove chicken and place on a baking dish.  Spread tomato sauce on the chicken and top with the 3 kinds of cheese.
6. Finally, sprinkle some parsley or dried Italian herbs on top.
7. Bake in oven at 225C for 15 mins until cheese is bubbling.
