300g Crocodile meat 5-6 Shitake mushrooms Sliced ginger Spring onion (cut into smaller sections) 2 cloves of Garlic (sliced)
For Marinating: 1/2 tsp Baking soda 1/2 tsp Salt 1 tsp Sugar 3 tsp Water 1 tbsp Hua diao wine
For Seasoning: 1 tbsp Oyster sauce 1 tsp Sugar 2 tbsp Hua diao wine 150ml Warm water
Method
1. Marinate crocodile meat for 30 mins and add 2 tsp of cornflour 2. Heat up Happy Call Pan for a few minutes and add 1 tbsp sesame oil 3. Add ginger and garlic and stir fry for a few seconds before adding shitake mushroom and crocodile meat into the pan 4. Close the lid on medium low heat and cook for 3-4 mins (flip the pan in between the cooking time) 5. Open the lid and add in the seasoning and warm water. Stir well and close lid 6. Stew on low heat for 15mins (check to see that the stew doesn't dry up)
