"Kong Bah" means braised pork in Hokkien. It can be served as a side dish with steamed rice or steamed buns with a slice of lettuce.
Ingredient and Portion
500g Pork belly
2 tbsp Light soya sauce
1 tbsp Dark soya sauce (for color)
1 tbsp Sugar
2 slices Ginger
4 pcs Garlic
4 pcs Shallot
1 Star anise
1 tbsp Hua tiao (optional)
1 stalk Spring onion (optional)
Method
1. Marinate pork belly with all the ingredients for 30mins
2. Heat Happy Call Pan, pick out the garlic, shallot, ginger and star anise and fry lightly till fragrant
3. Pour in pork with marinate and cook on med heat for 5 mins (manually flip the pork once)
3. Add in 1.5 cups of water and simmer on low heat for 1.5 hours
4. Flip the pork belly manually to ensure even cooking, check on water level and add more if necessary
5. If you prefer a heavier huatiao taste, add in 5-10mins before serving
