A good source of protein from meat and eggs prepared in an innovative way.
Ingredient and Portion
(A)
6 - 8 Hard boiled eggs

(B)
300g Minced meat (can use pork, chicken or beef or 1 can of luncheon meat)
2 medium Potatoes (boiled, peeled & mashed, leave to cool)
1 stalk Spring onions (cut finely)
1/2 tsp Sesame oil
1/2 tsp Chinese wine
1/4 Chicken granules (optional)
1/2 tsp Salt
Dash of Pepper

(C)
2 Eggs (beaten)

(D)
8pcs of Cream Crackers - blended into crumbs
Method
1. Mix ingredients (B) together in a bowl
2. Wrap eggs with mixed ingredients & place on a plate
3. Fill 1/3 height of oil in HappyCall Pan & switch on low heat
4. Coat with beaten eggs carefully & roll over biscuit crumb
5. Place coated eggs in HCP, turn fire to medium-low heat
6. Turn the scotch eggs carefully and fry till golden brown
7. Dish and serve
