Adding pineapple to your fried rice with a few simple steps for a yummy meal.
Ingredient and Portion
2 bowls of steamed rice (preferably overnight)
20 pieces of fresh medium size prawns
1 pair of XO Chinese sausage
1 tablespoon of minced shallots
1 tablespoon of minced garlic
1 bowl of frozen mixed vegetables (defrozed)
1 can of pineapple cubes
1 packet of Thai Pineapple Rice Paste
2 bowls of Crispy Pork Floss
Few sprigs of Cilantro leaves
Method
Shell and devein the prawns and chop into small pieces.
Diced the Chinese sausages thinly.
Heat oil in the frying pan, add minced shallots and garlic and sauté for 3 to 4 minutes.
Add prawn and mixed vegetables to cook for a further 3 minutes.
Then add diced sausages and stir to blend thoroughly.
Add the cooked rice and the packet of Thai Pineapple Rice Paste.
Stir well and cook until all the ingredients are coated with the rice paste.
Serve hot or transfer the pineapple rice into a rice steamer to keep warm.
Garnish each plate of pineapple rice with a generous amount of crispy pork floss and top with cilantro leaves.
Tips
You can include the pineapple rice with a bowl of tom yum soup to complete this meal.
