300g of chicken drumlets 1 ginger (sliced) 1 spring onion 1 garlic (chopped) 2 tsp of salted fish (wet or dry kind)
Seasoning 1 tbsp of oyster sauce 1 tsp of corn flour Drops of sesame oil 1 tbsp of chinese wine 2 tsp of salted fish (estimated depending on how salty you want it) 1/2 tsp suger Dash of pepper
Sauce 1tbsp oyster sauce 1 tsp of corn flour 5 tbsp of water 1 tbsp of chinese wine 1/4 tsp suger Drops of sesame oil 2 tsp of salted fish (estimated depending on how salty you want it)
Method
1. Marinate the chicken with seasoning for at least 3 hours. 2. Heat up HCP wil oil (abt 1 tbsp). 3. Pan fry the chicken for 3 minutes. Flip the Happy Call pan and cook for another 3 minutes. Leave magnet open for a slight crispiness. You may also put more oil to get deep fried effect. 4. Dish out chicken. 5. Stir fry the salted fish, ginger, garlic and spring onion till fragrant for about 1-2 min. 6. Return the chicken into HCP and add in sauce. Stir fry for about 1 min to mix them well. Close the HCP to simmer for 1 min. 7. Dish out and serve.
