1/2 chicken chopped into about 8-10pcs 3pcs Dried Mushrooms, soaked in water and sliced 2pcs Black Fungus, soaked in water and sliced 1 tbsp Wolfberries, washed and set aside 1 inch thick ginger, sliced thinly. 2pcs Potatoes, cut into cubes (optional)
Marinate Chicken for 30min with: 1 tbsp sesame oil 2 tbsp light soya sauce 1 tsp dark soya sauce Dash of pepper
Prepare separately in a bowl and mix well: 2 tbsp Hua tiao wine 1 tsp full sugar 1 tbsp oyster sauce 150ml water
Method
1. Heat pan and add 1tbsp of sesame oil for 30sec on medium fire. 2. Add in sliced ginger and sautéed until fragrant. 3. Put in the marinated Chicken and close pan for 3minutes 4. Flip and cook for another 2 minutes. 5: Flip back, open pan and add remaining ingredients, and add the bowl of seasoning. 6. Close pan and simmer for 20min on medium low fire. 7. Scoop and serve!
