250-300g crocodile meat 5-6 shiitake mushrooms ginger (sliced) spring onion (cut into smaller sections) 2 cloves of garlic (sliced)
Ingredients for marinating 1/2 teaspoon baking soda 1/2 teaspoon salt 1 teaspoon sugar 3 tablespoon water 1 tablespoon hua diao wine
Seasoning
Seasoning (to be mixed into a bowl) 1 tablespoon oyster sauce 1 teaspoon sugar 2 tablespoon Hua diao wine 150ml warm water
Method
1) Marinate the crocodile meat for 30mins then add 2 teaspoons of cornflour to the meat. 2) Heat up the Happy Call pan for a min, add 1tbsp sesame oil. 3) Add ginger and garlic and stir fry for a few seconds before adding the shitake mushroom and crocodile meat into the pan. Close the lid on medium low heat and cook for 3-4 mins (flip the pan in between the cooking time). 4) Open the lid and add in the seasoning and warm water. Give the ingredients a light stir to blend the seasoning well. 5) Stew on low heat for 15mins (open the lid 2-3x to check that the water didn't dry up too quickly. Light stirring will do, there's no need to flip the pan constantly.
