150-300g crocodile loin or tail meat 8 cloves garlic 8 pieces Chinese mushroom A pinch of cornflour
Seasoning
1 tsp hoi sin sauce 1 tsp salt 2 tsp sugar Pepper as desired Hua Tiao chiew as desired Maggie seasoning as desired 3 bowls water
Method
1. Cut meat into bite size pieces. 2. Use dry cloth or kitchen towels to absorb excess water. 3. Sprinkle cornflour on the meat. 4. Heat oil in pan and blanch the meat. 5. Combine all ingredients and seasoning in the pan. 6. Braise for 45 minutes.
