1) Deep fry eggplant in 1 tsp of oil. Flip twice, about 3mins each side. Set aside. 2) Add garlic & shrimps into pan and cook for about 2 minutes. 3) Add minced meat & seasoning and cook for about 1 minute. 4) Add eggplant and cook for 1 minute. 5) Serve, add spring onion if desired.
