The Sweet and Sour Meat is a winning combination of texture and flavour. Pork cubes fried to a crunchy crisp on the outside retains a juicy centre; The nuggets are then caramelized in a sweet and sour sauce that really whets the appetite.
Ingredient and Portion
Chang Cheng Sweet and Sour Paste
Diced Chicken - 200g
Tomato, Big Onion, Pineapple (angle-cut) - 200g
Red and Green Capsicum (angle-cut) - 200g
Egg Yolk - 1
Tapioca Flour - A little
Sesame Oil, Salt, Pepper - A little
Method
1. Marinate the diced chicken with salt, pepper and sesame oil.
2. Coat diced chicken with tapioca flour and fried till golden brown. Set aside for use.
3. Add in tomato, big onion, pineapple, red and green capsicum and stir fry till fragrant. Add in Chang Cheng Sweet and Sour Paste.
4. Add diced chicken into the sauce and stir evenly till sauce content is reduced. Ready to serve.
