8 medium prawns, trim away legs and veins 1 tomato, wedged 1 small onion, wedged
Oil for frying Sauce; 3 tbsp Tomato ketchup 2 1/2 tbsp sweet chili sauce 1/2 tsp sugar 20 ml water
Garnish; Spring onions
Method
-Blanched prawns in hot oil for 30 seconds, drained and set aside. -Stir fry onions in 1 tbsp oil, pour in sauce and tomatoes. -Bring to boil and toss in prawns. -When sauce thickens and prawns are evenly coated, garnish and serve. -Enjoy!
Tips
*longer cooking time and increase sauce portion if using more / bigger prawns. *corn starch not required as sugar and tomato ketchup will thickens the sauce.
