Well the Soup restaurant's signature dish, the Samsui Ginger Chicken originated from the history of the Samsui women in Singapore’s Chinatown who lived frugally and only had the means to prepare this dish during the Chinese New Year. Samsui women refer to the female Chinese immigrants who came to Singapore as menial labourers in the construction industry in the 1920s and had contributed greatly to the country’s rising economy.
So in preserving this festive dish, the Soup restaurant took extra care to prepare it in the same traditional way where the entire chicken is steamed-cooked deftly to maintain its rich chicken aroma and taste.
